Perfect soup to make during the flu season.

With flu season upon us, nothing says get well soon like a bowl of
homemade soup. The zesty flavors and aromas will surely make your
family feel better in no time at all. They will be asking for seconds.

I have always love pumpkins, there seams to be something so earthy and
magical about them. Must be their shape, or their bright orange colour.
During the spring and summer I love watching them grow.

Last week Hayden had the flu. So we made soup. Nothing
says get well soon like a Hearty bowl of homemade soup. I think its the
aromas as they are cooking, make everyone somehow feel better. And
i'm happy to report that is all better bow ;)

This is Spencer helping out, during our famous Sunday dinners, he could
not wait to eat it.

Miy Curry Pumpkin Soup Recipe
Preparation time ~ 15 minutes
Cooking time ~ 35 minutes
Makes 8 cups

1 medium to large size pumpkin, cut in cubes, approximately 8 cups
2 sweet apples (McIntosh)
2 sweet potatoes
1 tbsp olive oil
1 onion, chopped finely
2 crushed garlic cloves
1 leak
1 tbsp curry powder
1 tsp ground cumin
4 cups of chicken broth
2 cup of water
2 tsp brown sugar
Light sour cream or yogurt

Cut one medium pumpkin into cubes. Peel and chop the apples and
sweet potatoes.
Chop the onion and leak. Pore the oil in a large saucepan over medium
heat. Add the chopped onions, garlic, leaks, curry and cumin. Stir, sauté
until onions and leaks are soft, approximately 5 minutes. Stir in the
pumpkin cubes, apples, sweet potatoes, the broth, water and the sugar.
Bring to boil, stirring occasionally. Cover, reduce heat to low and shimmer
for 25-30 minutes, stirring occasionally.

For a pottagé style simply use a potato masher to make the soup more
chunky. For puree style, put the soup in food processor or blender and
blend to desired consistency. Place back in the pot and heat over low
heat. Add a couple of spoonfuls of sour cream or light yogurt to top off
the soup just prior to serving. Embellish with a dash of paprika or curry...
its all depends on your taste. Enjoy!

Cover and refrigerate remaining soup, it will keep up to 3 days. It also
freezes well.  

Perfect to store for those cold days and long winter ahead.

You easily double and triple the quantities as needed.
Stir in the pumpkin cubes, apples, sweet potatoes, the
broth, water and the sugar. Bring to boil, stirring
occasionally. Cover, reduce heat to low and shimmer

Pore oil into pan, fry onion, garlic and leak until soft.
